 We made it to the farm. Siembra Farm in Gainesville Florida. We are camping, working, and visiting our friends who own and run an organic farm. I am in awe. FRESH FOOD! There are trees everywhere. Friends everywhere. Blueberries everywhere. Vegetables everywhere. There are ticks everywhere too. Yesterday while exploring in some thick woods, the ticks really got me. I pulled out about ten.Yuck!! Ticks  love climbing up my pants and burrowing in my inner thighs.. Welcome to summer in Florida… Bugs galore!

 Siembra means to sow, to plant, to grow. And I am amazed. This organic family run farm produces so much food.  On our first day here, we helped gather and wash the CSA shares.

With a CSA, people pay a very reasonable amount for a weekly boxes of veggies. Whatever grows, is what goes in the box.  Fresh, delicious, organic produce. I honestly have never seen a better CSA.

One of the ways to avoid the high cost of healthy food, is to buy food in bulk and prepare food from scratch. My kitchen is packed with big jars full of rice, quinoa, dry beans, lentils, nuts, coconut flakes,dried fruit, rolled oats, oatgroats and more. Not only is it cheaper to buy in bulk, but also when we eat food closest to its natural form, it is obviously better for you. I try to stay away from food in cans. Not only is canned food expensive, but it produces more waste, and if you think about it,canned food is pretty gross.

In honor of healing with a healthier diet, today this post is about oat groats!! Oat groats are the whole  grain produced by the Avena Satvia plant. Most people are familiar with rolled oats. Rolled oats are made by steaming the oat groats and rolling them. The more processed oats are, the less nutritious. Instant oats? Boo. Forget about it!   Oat groats are far more nutritious, and the texture and taste is superior too.

Ode to Oat Groats

My son will eat almost anything (as long as it is vegetarian), but he doesn’t like eating oatmeal. He says I traumatized him when he was little by feeding him oatmeal for breakfast every single day. Well, it is true we ate a lot of oatmeal. Ha!  So he doesn’t like oatmeal, but he loves eating oat groats for breakfast!  We ate oat groats for breakfast this morning:

We cooked the oat groats. Then added unsweetened coconut flakes, almond butter, dried cranberries, hemp seeds, flax seeds, and then drizzled with raw honey. Mmmmmm. Food for a good mood.

Oat groats take longer to cook than oatmeal (about 45 minutes), but it is worth it. I promise. The energy from a breakfast like this, seems to last all day. And it tastes so good. Oat groats can be prepared raw too. Many raw food restaurants offer “Raw Groatmeal.” Soak the groats overnight and eat for breakfast. Or soak them a little longer, like 24 hrs, and you will taste and feel even more benefits.

Some health benefits of oat groats: Oat groats are high in magnesium, vitamin B1, manganese, selenium, iron, protein, antioxidants, and fiber (to name a few). Oats are known to help lower cholesterol levels, stabilize blood sugar levels, reduce the risk of heart disease, and oats aid in weight loss.

Oats are part of the family of glutenous grains.  So if you have a gluten sensitivity, proceed with caution. There is a great debate about oats and gluten.  I avoid wheat.  But my body really loves oats. So, learn to pay attention to what your body is saying.

This morning I woke up, drank a big infusion of lemongrass, and walked to yoga. It was a peaceful walk. And a strong class.

We always turn off the lights and close the curtains. It is dark and cozy.  We call our space  ”The cave”. Today the class was full of beautiful, powerful, amazing women. Together with breath and movement in sync,we generated so much energy.  Eyes closed. Healing. Floating. Flowing. Being.  There were Spirit Guides with us. Bright and vibrant.

Yoga helps us connect to wisdom, beauty, truth, and magic. We help aid our spiritual growth by practicing regularly, positive thinking (which is sometimes very hard), eating a healthy diet, and drinking herbal teas, or infusions. And today’s herb is lemongrass!

Lemongrass-Green Magic

Lemongrass is an herb that grows very well in subtropical to tropical locations.Lemongrass has many medicinal and magical properties. And it tastes good (it is often used in Thai dishes).  I planted lemongrass about a year ago in my backyard, and it is now as tall as I am.  Plants are magical. Yesterday, my son told me he was craving lemonade,but having no lemons, I offered to make him lemongrass iced tea. He was happy. We harvested about three stalks of lemongrass. I used scissors to cut the lemongrass into small pieces. We placed the lemongrass in two large glass jars. One for iced tea. And one for an infusion. We added boiling water and allowed to steep. For the iced tea, we steeped for about an hour. Then we added agave nectar. Lemony sweet.Ahhhh. Delicious.  For the infusion, I left it covered overnight.

Lemongrass is said to help clear the skin, aid digestion and calm the nerves. It has major anti-fungal properties, helps lower cholesterol, and the big one, Lemongrass repels mosquitos! Gotta love a natural insect repellent. (Especially if you live in the swamp!) There are many other healing properties to lemongrass.

Lemongrass is one of those wonder herbs with many magical properties. Lemongrass is known to enhance psychic vision, divination, and can be used in purification rituals. Lemongrass and yoga go well together.. Just don’t drink too much before class. Yoga with a full bladder is not fun.  Seriously. Ha!

I sometimes braid the grass and allow it to dry, then burn it to purify and cleanse any negativity in the house, or my aura. Lemongrass is a nice herb to add to a bath, and helps aid in dream-work when placed under the pillow.

A good friend of mine, recently gave me a the best gift. A 10 pound bag of Oatstraw. I love oatstraw. I need oatstraw. We all need oatstraw.

Oatstraw is considered an herbal tonic, for it helps bring the nervous system to balance. Especially after adrenal fatigue. Oatstraw helps ease anxiety as well as depression. It is known to help lower cholesterol, and help with skin conditions. Oatstraw contains B vitamins, calcium, magnesium, iron and more.  Oatstraw is also a mild aphrodisiac, so have fun. :)

So, what’s a girl to do with 10 pounds of oatstraw???? Plenty!  Rolling in the green!

I have been making oatstraw tea, infusions, and tinctures.

Making tea, is pretty basic. Add a few teaspoons of loose tea, steep for ten minutes and enjoy. Ahhh. Lovely. Relaxing. Healing.

An herbal infusion, is different from tea, because you use a much larger quantity of the herb, and you allow the herb to steep for 4 to 8 hours. Overnight is an easy way to do it too. An infusion is  super potent. I recommend about an ounce of the dried herb, a good-sized jar (with a lid), add boiling water, cover. Wait. Drink. Restore. Major healing.  Ahhh.

Dandelion Infusion, Oatsraw infusion, and a nettle infusion (I drank it all-tastes like spinich broth) mmmmm. :)

You will notice that tea and infusions, taste and feel quite different.

Over the weekend, I made a very large amount of oatstraw tincture. Tinctures require alcohol, glycerin, or vinegar, to extract the healing properties of the herb. Alcohol is the most potent, and lasts the longest. So, I used a large amount of grain alcohol. And in about 6 weeks, I will have plenty of oatstraw tincture to share. Talk about concentrated medicine, for that is exactly what a tincture is.

If you are new to herbal medicine, I suggest doing a little bit of research, and start taking a ‘herbal tonic’ that suits your specific needs. Like oatstraw or nettles (there are many herbs to choose from). Start with tea. Move to infusions. When you are ready to try tinctures (they don’t taste delicious), I recommend first buying a few. Experiment.    Nearly every health food store sells tinctures.  Give yourself at least a month, and I am sure you will  feel healthier, stronger, balanced.

Love pancakes? I do!  This morning, my son said, “I want pancakes.”   So I made pancakes, healthy pancakes… We call them Grumbly Ol’ Fisherman Pancakes.

Let’s be honest, most of the time, the pancakes people eat are crap.  White flour, fake maple syrup (corn syrup and artifical flavor),  and tons of  margarine…(eww)..Junk food for breakfast. :(   When we eat food like that, often we feel heavy and gross and crash before lunch.

It is time to change and take care of our bodies (and our earth):  Make delicious pancakes with nutrient dense food,   get the awesome taste, plus lasting energy.

Everything you need for nutritious Pancakes!

Prepare pancake mix, I use Red Mill Gluten Free pancake mix…. it is one of the better Gluten Free pancakes mixes…

Add cooked brown rice (the more the better)

Add cooked Quinoa (experiment with the amount)

Sprinkle some flax seeds… (optional)

Cook. Sweeten with a little Agave, honey, or real maple syrup….. Eat. Yum. Amazing Pancakes!

I got the brilliant idea from my Dad. My Dad, lives in Washington state, He is a fisherman, gardener, farmer, hiker, bicyclist, and mushroom hunter (not psychedelic ones, although that might be fun! HA).  He has a lot of wisdom.  He is an all around cool guy.  Looking back, I am able to see how his influence, shaped my life in really positive ways.  I practically grew up camping.  And not car camping, real backpacking trips…. all over the Northwest. My Dad showed us the magic of  nature, and he showed us the magic of pancakes.  He loves making pancakes  with brown rice.

 Every time we visit my Dad, in the mornings he wakes up and with an excited twinkle in his eye, he say’s “Want some pancakes?” 

Well, actually, the last time we visited, he was big on waffles (the batter is still the same),  they were loaded with brown rice.

He likes to eat his healthy pancakes, and then go fishing….

   This year has already proven to be a year of change. Many of my closest Mama friends have made big moves, Costa Rica, Indonesia, South Carolina, and Gainesville. All left the city and moved to farm communities. All striving to live healthier, more connected lives.  I miss my dear friends,  but I am excited for their new adventures(And, I am excited to have more places to go visit! Ha!) There are changes in the air for me too.  I plan on taking a big trip this summer, to a magical land (not telling you where yet!). I will share my plan and journey with you soon. Stay Tuned….

Anyways, 2012 really is a year of change for all of us.  One of the commitments I made to myself was better self-care. And that includes, rest, nutrition, exercise, meditation, and de-cluttering my house and life.  I started homeschooling and I started spending more time working on my blog (writing is very therapeutic for me-Gemini).  I am taking long walks and long baths.. and eating lots of vegetables.

You are what you eat!

 Food is Medicine. I have mentioned before, that my son had a bad fall out of a tree, a couple months ago.  His left arm was badly broken and he is left-handed. Boo. :(  His break required surgery and two long rods. It was stressful, to say the least. And healing has been slow. To aid my son’s healing, and my own, I decided I needed to add more leafy greens to our diet.  Unfortunately, organic, good quality fresh greens, can be hard to come by and expensive. I was still determined. 

 Almost as if I had manifested a miracle,  a friend of mine, an organic farmer, moved back to town. He called me up out of the blue, and asked if I wanted some fresh vegetables.So now, every week, my friend, a young urban farmer, has been bringing me mountains of vegetables. I consider these veggies a miracle.  I am full of gratitude.

Every week, the veggies are different.  I am experimenting and learning many different ways to prepare all this healing food. I really feel a difference.  I can see a difference in my skin. Today I made the most delicious salad. So delicious, that I have to share it.

Divine Kale avocado Salad

Step one: Prepare a marinade.  1 tablespoon apple cider vinegar, 1 tablespoon Bragg’s Liquid Aminos, 1 tablespoon olive oil, 1 tablespoon raw honey,  fresh minced garlic, and fresh thyme, to desired taste.   

Step two: Cut the kale into small strips, I use scissors, it is quick 

Step three: Pour marinade over Kale and chill for one hour

Step Four: Add fresh avocado (the more the better)

Step 5: Eat and feel good.

Try it, you will like it. (Sorry I didn’t take a picture of the salad, but make it anyways, it is good!)

Give thanks to farmers. Give thanks to our food.

Hooray for Fresh Veggies!


 I love sweets. I really LOVE SWEETS!!!!! And I never deprive myself.  Through experimenting, reading, and learning to listen to my body;  I’ve learned how to get the sweet fix my body craves, plus the nutrition my body needs.    I eat nutrient rich foods  ..  MMMMMMM.

 I have mentioned before that, yoga increases awareness.  Yoga helps us tune in. Yoga helps us discover what works for our bodies, and what doesn’t. We can learn to feel what food helps and what food harms. Food can be medicine or poison. Find out what your body needs.

For me, a hearty breakfast,  is essential. But also essential, is eating food that will give me a steady stream of energy, and eating food that tastes good. My favorite breakfast, Heavenly Quinoa, is both rich in calories and nutrients. It is  delicious, and it makes me feel good.  You should try it.

Quinoa comes in a few different varieties, white, red, and black.  It can be prepared many ways. Most often it is prepared and eaten like rice is… but it can also be made into a porridge(my favorite) or pudding. Or sprouted. Or you can grind and use as  flour!  The possibilities are endless!  It is has a yummy nutty flavor.

Quinoa is a super food known to have many health benefits.  It is considered a grain but actually, it’s more closely related to Swiss Chard and Spinich. Go leafy greens!  Vegetarians, shout from the rooftops. Hooray! Quinoa is high in protein. And complete protein. All 9 amino acids!  Woohoo.  It is also high in magnesium, manganese,  fiber,  lysine, vitamin B2,and high in antioxidants, to name a few. Talk about power food! Do some research, try it. Your body will thank you.

Honey

Cook  quinoa 20-25 mins(1 part quinoa, two parts water).  Allow Quinoa to cool to desired temperature. Add almond milk, a heaping spoonful (or more) of almond butter, some sliced bananas and then drizzle with honey.

Another delicious variation is to use coconut milk and coconut flakes, honey, and sprinkle with almond slivers.

Mmmm.  Eat for breakfast, or chill and serve as dessert.

By the way,  Happy Mayan New Year!    Today is the beginning of the last year in the fifth Sun. December 21 2012 is the end of this new year. This is an awesome year full of wisdom, new beginnings, positive thinking and ways (like diet).  Last night we went to a traditional Mayan Ceremony and were blessed by Mayan Elders.  We were cleansed, purified, walked around the fire, and took part in some chanting. Truly a beautiful experience. Happy New Year!  Now go make some quinoa! Ha! ~T


It is amazing how quickly emotions shift and energy changes. The only constant, is change.

I had a very stressful week, with family feuds,  work stress, and being a single mom. On top of that my son recently broke his left arm severely, and he is left-handed. Ugh. He was in the hospital for two days and has had two surgeries.  Things are settling now, but the whole experience was overwhelming and exhausting. Even now, when I recall the memory of his accident and how horrifying his arm looked, I become very emotional. Talk about depleted.   Anyways, as stress piles on, it is hard to come to a place of stillness. My mind became so agitated and my body so tense that I instinctively knew my cure could only come from  a strong practice.  A strong spiritual practice. At times like these, I turn to Kundalini yoga. Amazing for cleaning and recharging. Amazing for accepting and forgiving.  Amazing for letting go and learning to trust.

So I started my sunday morning with a cup of tea and a Kundalini practice. I really enjoy Sarah Klines 50 minute Kundalini yoga practice on youtube.  Exactly what I needed. Feeling recharged, I dedicated my day to restoring and healing. And cleaning my messy house.

A friend of mine who is an organic farmer, stopped by in the morning and brought me two grocery bags full of organic produce from his garden.   I was so happy. Fresh delicious produce. Talk about food as medicine!  I made Kale chips in the oven and fresh veggie burgers with my food processor.. the veggie burgers are a favorite of my son’s. :)

I make up my own recipes and never measure anything—Be adventurous!  Experiment!

Kale Chips

Pre-heat oven to 200 degrees or 250 max!

Wash kale and tear leaves off from the stem - medium size pieces

Prepare a mixture of olive oil and Braggs, Tamari or salt to taste, and a little cayenne pepper

Massage mixture into the kale.

 cook  until crisp.  Usually about 1 to 2 hours

Ingredients: Tomato,red pepper,garlic,kale,sunflower seeds,uncooked oats ,salt and spices to taste

Puree everything in food processor,   add in more whole oats  and stir.  Form into patties….cook with butter, coconut, or olive oil

I put the leftovers in  freezer for a quick meal or snack. mmm. Delicious and nutritious.

Anyways, after my cooking adventure, I was motivated to clean….but I got an offer I just couldn’t refuse.  “Come Harvest honey!”

My good friends called to see if my son and  I wanted to come play with the bees and help harvest honey. So we spent the majority of our day building bee boxes, scraping off old wax and propolis, playing with  bees, harvesting honey,  spinning the honey, melting down wax, and laughing with good friends.

Covered in honey,  I couldn’t stop smiling. Sticky and sweet, we drank and licked massive amounts of honey , and ate delicious pollen.  I love bees.

This was not my first time being around bees, but it can be really scary when they begin to get upset. When I feel myself becoming overwhlemed with fear, I close my eyes and take slow deep breaths. The bees seem to relax when we relax. A good lesson, anytime we are overwhelmed with fear or anxiety, remember to breathe.  Yoga and beekeeping. Yoga and life.

My son was always a little nervous around bees, especially when we had a hive in our backyard.   BUT, through bee education and experiencing the process,  he now  wants to be a beekeeper too.  He had a blast.  :)

My friend gave me a  honey bee education program for kids full of information,  lesson plans, diagrams,  and vocabulary. Perfect for my son’s homeschool portfolio.

The day was seriously amazing.

We came home with a nice  jar of honey, sticky sweet clothes, and shiny happy eyes . I had a cup of tea with a good friend, and gave thanks for the day.

Full of gratitude.  And full of yoga, kale, and honey.  :)

Yoga increases awareness. Awareness with breath, body, soul, and with everything. So obviously, this  includes the food we eat.

Always being a bit of a rebel,  I made the decision to be  vegetarian the day before my 9th birthday.   So, even though I lived with a family who ate meat, I refused.

That doesn’t mean I grew up eating healthy fruits and vegetables. Hardly, all it means is, I didn’t eat meat!  As a teenager, I ate the crappiest food you could  imagine. That is if you actually count Swedish Fish and Mountain Dew as food. Seriously, even thinking about the stuff I used to put in my body, makes me feel physically ill. Gas station nachos, taco bell burritos,  processed cheese, and candy.  Loads and loads of candy.  My dear friend Janee and I would put on wigs, dress like lunatics and go the the Top Foods Grocery store bulk section in Olympia. We would buy pounds of candy, and a bunch of fresh ginger root.  The ginger was for tea  to soothe our stomachs so we could make room for more candy. Seriously. We would boil a big pot of ginger  tea, sit down with our bags of candy, and watch old Westerns.  Rawhide with Clint Eastwood was our favorite.  Ahh good ol’ Rowdy Yates and Gil Favor. Ahh to be a teenager.

Continuing. When I started practicing yoga,  and right away, I began to change my diet. Small steps for sure, I always craved sweets, but I begun getting  “natural” sweets from the Food Co-op,  and I started thinking about the importance of organic foods.  I started to understand that the food we eat contains energy, and I could feel how the energy from lentils and rice, is different than the energy from a cupake. Food is fuel.

As my practice became even more a part of my life, my diet changed even more. My cravings have changed.  I can feel with great sensitivity, that  junk food affects not only my body, but also my mind.   I feel sluggish and gross when I make poor food choices.  I feel vibrant and energized when I eat well.

Through yoga (awareness), I have discovered power foods. Like carrots and almonds.  Both make me feel good.  I have also realized certain intolerances to  foods I used to eat daily. Like wheat and dairy. -Wow,  when I eliminated them from my diet (It really isn’t that hard) I felt so much better!

 I started learning more about pesticides, the harmful agricultural practices of today, and realized that we are poisoning our foods, poisoning our world. The mainstream farming practices don’t work. I won’t support them.   There is another way. Obviously, this means, I spend  a lot of my money on food. But remember, food can be medicine or poison.  We  have to learn to feel the difference.  Is there anything more important than health?

 I buy organic, I support local farmers as much as possible, I have a little garden, and  I buy bulk products.  I could do more, but like I said, small steps.   I make and eat really delicious food. And soon, I will start posting some good food ideas….Yeah! Yummy healthy food!

There is a  “Sister Science” to yoga called Ayurveda, that can help us learn to heal our body.  We can heal through our diet, and through tuning in and learning to follow our natural cycles.     Check it out.. there are tons of great resources and websites with a lot of information on Ayurveda.

 Yoga cultivates awareness. Love your body, love the earth… we are all connected.

Often I am asked by people why I choose to be a vegetarian.  I have always been a bit different. I grew up with a family who ate meat.  But when I was just about to turn 9 years old, I made the decision to become a vegetarian.  I have not eaten meat since.  24 years.  My son has been a vegetarian since birth. Unfortunately, some people still hold the thought that if you don’t eat meat then you must surely survive on carrots and salad and must surely risk starving to death.  Obviously not true.  I eat the most delicious food in the world.   When I became a vegetarian, it was something I felt strongly about and still do.  I couldn’t imagine or stand the thought of animals suffering and dying in cruel ways to provide us food,  it affected me very deeply.

Years later as I begun to study yoga, I was happy to learn that the study of yoga encourages a vegetarian lifestyle.  Some yogis and yoginis debate the importance of this.  Some argue that they feel stronger and healthier eating meat. Others argue that eating meat is eating death, and that death and slaughter, pain and torture, fog up our energetic system and weigh us down with negative karma. The Yoga Sutras and even the Bagavad gita talk of importance of a vegetarian lifestyle.  Some yogis BKS Iyengar included, suggest that being vegetarian is a neccesity to the true practice of yoga.   Ahimsa, nonviolence, one of the most basic commitments to the practice of yoga; who and what does this apply to?

I  don’t judge anyone based on their decision to eat or not to eat meat.  I do however think it is important to get in touch with your body and notice how different food affects you.  I would suggest doing some real soul searching, maybe even visiting a farm where animals are killed for food, and then decide how you feel about it.  Studying yogic text is a helpful guide on our path, but learning to listen to our own hearts is even more important.

This is surely a topic I will post on frequently…. and maybe even add some food reviews.  Stay tuned.
